The other reason I am writing this, in addition to sharing with others of the good (or bad) restaurants I’ve visited, is to remind me of what I had so that I can order (or NOT order) the food again next time.
I am not paid to write for the restaurants so I can only sample the dishes via multiple visits. The photos will therefore change over time as I take better pictures and try new dishes.

When I drive Uber, one of the favourite topics I like to have with my riders is food. On one occasion, I picked up a Thai rider and naturally, I asked where is his favourite Thai restaurant.
He replied that Sydney's Thai food is really bad. "Pad Thai is too sweet!", he exclaimed!
I said "Yes! That's what I thought too and that's why I don't order Pad Thai!"
He then told me about Caysorn Thai. He said the Fried Rice is really good.
He was right. I've been to Caysorn for so many times and I've yet NOT to order the Fried Rice. It's that good.
Many of the dishes are very different to the usual Thai dishes you find elsewhere.
One of my favourites, Meang Goong, is particularly hard to find in Sydney, let alone done very well.
Caysorn's is the best I've tasted in Sydney without having to go to Thailand.

Fried Rice (#15):
Kanoom Jeen Tai Pla (#18): Blended flathead with spicy curry paste.
Isan Sausage (#58): Griled eastern styled pork sausage.
Nahm Prik Goong Sod (#78): Fried egg plant with spicy shrimp paste
Meang Goong (#11): Put a bit of the mixture on the leaf and eat it in one mouthful. Mmm....
Somtum with Salted Duck Egg (#82):
Gai Yang Kaow Lae (#3): Southern styled grilled marinated chicken
Grilled Octopus (special, not on menu):

Had Yai Fried Chicken (not on the regular menu):

The boring stuff:
The restaurant is in Chinatown, in the Prince Centre behind Market City.
Street-side parking is hard to find, but not impossible. There are about 3 parking stations around it, all within 50-100 metres of walking.
The restaurant is tastefully decorated, not over the top. The acoustics of the restaurant is quite good. When the restaurant is full, it doesn't get too noisy.
